About Ajara Taluka

Ajara is one of the southernmost taluka in Kolhapur District of Maharashtra. It is blessed by nature in terms of forest, mountains and waterfalls. Ajara Taluka is one of the gates of Konkan region. The climate is rainy and dry throughout the year. Agriculture is main occupation for the people in this area The soil in Ajara Taluka is radish brown and medium black soil which is fairly rich in calcium and is fertile; the environment is suitable for rice farming. Also other agro productions are grown on large scale such as Cashew, Jak fruits, Mango, Banana, Nachani, Jawar, Sugarcane and other fruits and vegetables.

Every variety of rice has a different taste depending on the region where it grows.

Naturally grown Ghansal rice (free of chemical residue) is packed with health benefits. It is rare and special and therefore the production is in smaller quantities. Because of its simple taste it pairs well with an array of vegetables and side dishes.

Ajara Ghansal is a good source of B vitamins (contains - thiamine, niacin, and riboflavin) and iron. Rice is also a rich source of manganese and magnesium. The Ajara Ghansal Rice is known for its nutrition, taste and aroma and has great demand in international market. Rice is polished by traditional ways manually instead of mechanized polish. Because of which aromatic taste remains intact and preferred and there is great demand for it.

Cooking Instructions

  • Do not wash rice too much before cooking.
  • Soak rice in water for 20 mins.
  • Then drain water which will remove the extra starch. ( Drained Water can be Used as Shampoo For Hair or use as Face Mask)
  • Take a deep thick bottomed pan.
  • Heat 1 tsp oil. Add rice and sauté for 1 minute.
  • Add 2.25 cups hot water.
  • Turn heat to low and cover the pan for 15 - 20 minutes.( 10mins more for Hand pounded rice)
  • Serve with Ghee on top or with curry, tastes delicious!
